Oregano [ Origanum Vulgare ] is a bushy perennial with pretty deep purple-brown stems and 1 1/2 inch broadly ovate leaves that often have a red flush. Tiny, white to rosy pink flowers appear in loose, terminal or axillary spikes throughout the summer. Branched clusters of purple-pink flowers appear all summer. Best leaf flavor usually occurs just prior to flowering, but the quality of flavor can vary considerably from plant to plant.
Oregano [ Origanum Vulgare ] is mainly used dry, and the flavor is strong enough to stand up to bold flavors like tomatoes, onion, garlic and beef. Pungently aromatic, oregano is one of the most important herbs of Italian, Greek and Mexican cooking. Clip leaves throughout the growing season and use fresh or dried.
